5 Gallons— Plum in carboy (my 4rth @ 2 months)This one had 15lbs plums pitted then pureed in food processor. No mesh bag just mixed everything together and let it sit for 10 days in the primary then strained…racked…racked…must listen to wife and use mesh bag next time!…racked..still clearing. I used 12lbs of wildflower honey and Red Star Champagne Yeast. This was an experimental mead. I did not pasturize the honey and did not sterilize the fruit. I just washed the fruit very well and made the water just hot enough to mix in the honey. So far so good it smells wonderful!
11/26/07 This one just would not settle out and clear even after filtering out (muslin) the solids. The remaining solids just hung in suspension like an emulsion. I finally read about some one on this site using pectinese (sp?) in his melomels even though he never heated the fruit so I thought what the heck go ahead and try it. Two days later I had 2" of sediment on the bottom of the carboy!!!! I racked it and its on its way to clearing YEA!
