Subject: Question about clarity


This is my first post to MLD, so I hope everything goes right.
I brewed my second and third batch of mead yesterday. I followed one of the
recipes from the ftp sight which suggested keeping the honey/water at sub
boiling temperature and skimming the yellowish scum until no more scum
forms. As I was doing this I noticed that the honey water started to become
clearer. Is this because the "scum" is being removed or is it due to some
other reason?
