Does anyone have a good recipe for an apple mead? I tried making some this past winter using 2 gallons of clover honey, 6 gallons of apple cider, 7 gallons of water, and cyser yeast. It didn't turn out well. I had to pour it all down the drain. ???

Any suggestions would be appreciated.

I got my cyser recipe from the "ThirstyViking", which turned out very well. No water is used. I don't recall, without looking in my "Mead Log", but it seems I used some black tea leaves and some raisins for body. It seems I used 3lb honey to gallon of juice, with K1 yeast.

Good luck. The main thing is, don't give up.

I have used ThirstyViking's recipe as well. Liked it so much the first time, I've got another batch going now!

1 gallon apple juice (no preservatives)
2.5 lbs honey
yeast (I used Champagne)

The key to this was ThirstyViking's suggestion to top off with Apple Juice Concentrate. It bring back some apple flavor as well as some sweetness. We probably added too much AJC to the first batch, but that didn't stop us from drinking every last drop! ;D

Yes the key to champagne yeast on my recipe is to sweeten with AJC, it runs too Dry otherwise and loses it's apple charachter. K1-v1116 yeast is a better choice for not having to sweeten on the back end.

If you can find Mott's 100% natural apple juice, try it! I've used it to make a couple of batches of cyser with very good results.

I was planning to try it again using one gallon of apple juice concentrate, 2 gallons of clover honey, and 12 gallons of water. Tell me, isn't the end product too thick if you just use honey and apple cider?

No, it won't be thick at all. Usually no water is used in cyser except a bit to dissolve the honey, however some use none at all and heat the cider to help dissolve the honey.

I haven't tried this yet in making mead, but I really like the apple juice from: http://www.martinellis.com/

The have the following available:
128 oz. Apple Juice
50.7 oz. Apple Juice
50.7 oz. Unfiltered Apple Juice
50.7 oz. Cider
25.4 oz. Apple Juice
25.4 oz. Organic Apple Juice

They all list:
"They contain no concentrates, no flavorings,
no preservatives, and no additives of any kind."

My local grocery carries some of their stuff. A wee bit expensive, but VERY tasty !
