Just wanted to throw this in here, since neither of the websites mentioned it. Caseine, aka sodium or potassium caseinate is a big ugly protein. And like all proteins it has the potential for an allergic reaction. The allergy is VERY very rare, but like some allergic reactions it tends to be VERY violent. Not trying to scare anyone or anything, but just wanted to put the word out there.(since the sulfite debate rages on...) and yes, I realize the point of a fining agent is to clear the haze and then be left in the crud, but some may still be floating around in the final product and it only takes one bad allergic reaction to ruin a nice day.
