Today I made my first batch of mead. ;D It is made with a gallon of apple juice, 3 pounds of honey, and cinnamon, cloves, and a dash of ground nutmeg. When I pitched the yeast in, the must was too hot, and most of the yeast died instantly, but some survived and started fermenting. after an hour I went out to the corner store, and got a pack of fleischman's bread yeast. I pitched it into a glass of tepid water, and when I poured it into the carboy, it frothed up all over the stovetop, and I had to cap it in a hurry with a balloon with pinpricks in it. It's fermenting right now. Hope it tastes good. :D
