Is there a quick mead I can get together quick-enough that would be ready for Pennsic, something in the five gallon variation? It's by the end of July. The only thing I found that looks close is a 5-gallon version of the JAO. Any suggestions?
You just looking for something that would be drinkable in 2 months, or does it have to try and be period as well? A sweet Orange Blossom mead could be drinkable in that time frame, not that it wouldn't improve with some aging. But to finish that quickly you would need to use yeast nutrients.
If you want to go with a traditional mead such as orange blossom, the ones that I have made with DV10 have tasted the best early on with none of the harsh "green" tastes or fusel that some yeast generate. Just a thought.
