I don't have a whole lot of experience with Oak, but it seems like the pros deem it necessary, so i need to learn more about it.

I have a friend who made his own Oak concentrate and really likes this method. Does anyone have experience with this? I've read (and searched this forum) that some people think that this adds some harshness to the mead.

What is it about adding the oak directly to the mead that makes this more smooth?

Has anyone tried this?

It seems a bit of a gamble to Oak .. especially with Chips. I don't know what it tastes like to over oak, but i don't know now when to oak... and for how much.

I bought a small bottle of oak concentrate years ago, tried it once but didn't really like it, especially after reading the label.

Wood, real wood, is a complex substance, and with care it'll lend that same complexity to your mead.

If you're making extract by soaking chips in vodka and then adding that, I can't see it being any worse/different than chips really. I think that might be actually a better idea (unless you can just get cubes, then skip all this and just use cubes) than adding the chips directly - it might let you control how much oak is added more precisely.

A little oak goes a long way. A lot of oak takes a long time to go away. ;)
