I wanted a short mead that would be ready in couple of weeks as the weather is getting warmer. Tis the season for Hefe's. I ended up making this 6% ABV which is a little strong for Hefe's but what the hell.

5.5 gallons OB Hefe extract recipe

4.5 lbs OB raw honey from Florida
3.3 lbs Wheat DME
.5 lbs Carapils
1.5 oz German Hallertau hops

White labs 611 from the vault

Steeped the Carapils at 160 deg F for 30 minutes in 3.5 gallons . Brought the water to boil and added DME and hops for 60 min. Added honey while cooling down the must. Pitched yeast.

pH: Don't care it's low ABV
OG: 1.062

The WLP 611 is got a clean smell to it. I do smell hints of bananas and it's foaming pretty good. It's in production for mass sale. They harvested it from apple skins and they do recommend it for cider. Might have to make a cyser when I harvest the yeast and if I have any left over cider from the JAOC experiment.

How do you keep it from all settling out in the bottle? Just drink it quick?

Degassed but not clear... doesn't matter because Hefe's are not clear and need to have a little yeasty taste. Going to bottle this weekend and priming this with sugar tabs to carbonate instead of kegging.

Haha. Clarity is not necessary with a Hefe unless you're doing a Kristalweizen. It's not a bad thing to have a little yeasty taste with a Hefe so again I don't care if things get stirred up. Just bottled it tonight with 5 oz of priming sugar added to the whole 5 gallons. Now we wait.

Very subtle flavors all around. Maybe increase both the malt and honey to increase the flavor. Maybe add a little bit of Crystal malt the next time. I won't judge too much until it's carbonated and it's had time to sit.
