If you're concerned about the illegality of distilling your own spirit, then you can always just look up the "Still Spirits" range of flavourings etc, but instead of using a still etc, you just substitute their home brewed/distilled spirit for the cheapest vodka you can get.Not legal here either, BUT...i do have friends who work in laboratories, and THEY are allowed. Freeze concentration is legal though, up to 25% as I understand it.
Isn't baileys only about 17% ABV anyways? One could just ferment to that level with residual sugar no problem.
