I've been reading wonderful things about acacia wood barrels in aging white wines. Supposedly, acacia wood provides structure and floral characteristics to white wine. I would like to try it in mead, but acacia barrels are impossible to find in the states.
Does anyone know of a source for cured acacia wood I can toast myself?
