Hi
When i googled these there seems to be alot of varying answers so i said id ask here before starting first batch.

I am using a 33ltr fermenter for primary and siphoning to 3 10 ltr fermenters for secondary. How many Campden tablets would i need to use in 33ltr at beginning and should i use them in the 10 ltr after fermenting has stopped.

Also how long do most of ye age for after bottling.

Standard usage would be one table for 1 gallon (3.8 L), so your batch would be 8.5 tablets. You would also typically use after/when you rack it. That is the shotgun approach.

The amount of the Potassium Metabisulphite (what the tablet is made of |edit: it could also be Sodium Metabisulphate) should be based on the pH of what you are treating. The higher the pH, the increased amount that is needed.

The ideal, once you know how much is needed to treat is to subtract out the amount of Free SO2 already in the must so that you are not over treating it. The image below explains the SO2 amount based upon pH. What it doesn't take into account is that at higher alcohol levels there is less chance of contamination, but I have been using the sulphite amount based upon what I measure the pH and how much treatment is needed.
