Recently brewed 2 gallons of blueberry mead. Everything went fine. Finished fermenting at .099. RACKED it after 6 weeks and it is crystal clear. Probably the best looking mead I've done yet. Anyways, I bottled it into several 16oz bottles. That was 2 months ago. Yesterday I decided to open one for quality control. It was highly carbonated. Most half the volume by the time I got it under control. Worried about bottle bombs, I decided to check the rest of the bottles, probably a half dozen or so. None of the others showed the slightest bit of carbonation. Just the one bottle. How can this be? Shouldn't they all be carbonated? No backsweetening was done. No yeast evident. All stored under the same conditions, temp, etc.
I'm at a loss to explain this one.
