Very surprising. I've never used Lalvin 71B yeast,
but I was certain it would be a slow(er) starter and
here it's turned out faster than ANY other yeast
I've used.

12 pounds honey
1 quart dark cherry juice
1 teaspoon DAP
water for 4.25 gallons
2 packages Lalvn 71B

I'll back-sweeten and add another 3 quarts of cherry
juice and later.
 
Lallemand/Lalvin yeast are great yeasts. That's why I use them almost exclusively now. They're very consistant in my experience and 71B is one of my workhorses along with K1, D47 and DV10.

I've use K1 and D47. Both of these took on the
order of 48 hours to start bubbling in the airlock,
I suspect it's a matter of temperature and SG.
 
I'd say defineately one of those two. D47 starts up pretty quick and K1 is even faster. I've had D47 take a day or so to really get going, but the temperature was very low, and I had to bring the must temperature up a bit for it to take off. When it did, it took off like a rocket.
