Hello Everyone,

I am getting together with some fellow Mead makers here in Devon to setup a Micro Meadery, we will also be making some Country Wines.

Our aim is to produce our own honey, our primary site is on National Trust property. Burrow Farm sits amongst rolling hills and forests just on the outskirts of Exeter. We have an abundance of flowering fruit trees, wild flowers and plants able to support our bees. We also plan on sourcing honey from local producers.

Although we are not experienced beekeepers, we will be trained by our supplier and I have a number of contacts, one of which used to work with Brother Adam at Buckfast Abbey.

Our Mead will be produced in a similar way to Brother Adam, following his guidelines and of course putting our own twist on things.
We want our Mead to stand out above all others, not the wine based blend that is peddled as Mead by so many producers.

Drawing on the experience of Burrow Farm, we will be able to showcase our produce at local markets and festivals, while being able to promote our produce through their business.

We just need your help to raise funds to enable us to launch our idea next year. In exchange for funding our project we will be providing you with samples of our produce and a discount going forward. We also welcome any and all feedback and suggestions.
It is a bold project, however no matter how much is raised we will scale back our operation as necessary so that we will get the project off the ground.

I've looked into a few things like this but never been brave enough to think any further on.

The scariest part to me, is the Excise department people and licensing...

IMO, you'll need to be a little more commercial to follow Brother Adams method/technique too closely, but working in his spirit of things is marvellous......

Thanks for your posts. The licensing and duty of commercial production can be costly.

We would like to produce an entry level 'table mead' at 12% from a lighter honey and possibly a few stronger flavoured with a higher ABV.
Keeping it all under 15% ABV is the key as duty becomes quite pricey.

The one good thing is that we can produce and store the mead and only pay the duty once we are ready to release it for sale.

It is interesting to speak with the beekeepers who have worked closely with Br Adam and the wild flower honey produced on Dartmoor is very nice. Plan to have a go at a small batch of mead with their honey.
Also as Buckfastleigh is only down the road, I must plan a visit soon.
