A new Meadery !

Awesome !!! I hope you/they have great success !!! I didn't know drought was still in Texas (I don't get many weather reports for Texas out this way) and that honey supplies there were tight.

Hmm, I wonder why they brew with such a low alcohol content. The lowest I've ever done is about 9%. Maybe it's the 'beer' market segment that are going after....

As far as the drought goes, its a big state.. certain parts of the state have it worse than others... Still, Lake Travis here in Austin is still down 30-40ft from the drought 2 years ago, so aquifers still havent gotten up to where they used to be.

We are reaching out to the craft beer segment and the cider segment. Also trying to gain the trust of the wine crowd by doing some pyments. So far, its been very well received... now to just keep up with production :) There are others doing low ABV meads like Blue Dog and Nectar Creek.

Well, ifbthe competition is going low, maybe you should go high ! Like....everything is big in Texas, right? Home of the Alamo, erl wells, and former presidents.....

The guys I mentioned are in Oregon and a long way from being direct competition. Were just *starting* low... an introductory mead, if you will. kegging and going the whole carbonation route is quicker turn over and better exposure in the market. But like homebrewing, its is much more capital intensive than bottling stills. No one was doing it; we believed we knew what we were doing.

Any chance this mead will be shipped to the Dallas area? If so, where? I would love to try a bottle...or a case. My family loves mead.

As for getting to Dallas and Houston.. we're moving at the pace of money. Tanks went the wrong way around the world, so there's that.... trying to ease into the Austin market first, but Houston and Dallas are on the radar for next year. We are working on the repeated pilots of some of the still meads at the moment with a few small batch pyments aging and a good bit of cyser started. Way too much to do.....
