Vintners Harvest Peach Wine Base

I've been doing 1 gal batches to get the gist of wine making. my first few were mead then wild berries and grapes. im stepping it up this year to 3 gals. Im trying the V/H peach base. I'm using a 5 gal bucket for primary then racking into 3 gal carboy. i decided to go with 3.5 gal in bucket to allow for loss during racking.

3.5 gals
1-96oz can of V/H peach base
10.5 lbs sugar (8# at pitch)
2 tsp acid blend
4 tsp nutrients (2.5 at pitch)
1 tsp pectic enzymes
.5 tsp tannin
71B yeast

3/10. OG .090
3/12. SG .069 added 2.5# sugar
SG .095
3/14 removed bag o peaches
SG .050

My question:
Do i need to rack this or can i let it run its course then rack into carboy?
