So I have a friend who wants at least 5 gallons of mead for his Yule party, and I dunno if I can supply easily by mid-December. I've read the GotMead quick mead recipes, but most are for 1-gallon batches. Any suggestions on yeast, temperature, kinds of honey, nutrients, additives, etc. for a big batch? It needs to be a decent, drinkable mead by early December (8 weeks!), so nothing fancy that might require aging!

Use Joe's Ancient Orange. Multiply everything but the yeast by 5 for a 5 gallon batch. Start it today and it will be done fermenting and just about cleared in 2 months.
