How long does yeast last?

Hello all,

Just picked up everything I needed to put together my first JAO batch and noticed when I got home that the Fleishman's yeast is dated 'Best Rising Before Aug 27th'

Should I head back out to the store and get a replacement package or should it be fairly safe?

I'm no expert here, but if it were me, I would go ahead and use the yeast you have with the August 27 expiration date ..... provided of course it is 2006 and NOT 2005 - or even older!

Yeast, in very general terms, can be used up to a year past it's printed expiration date. Anything past that and you're rolling the dice. Many people using yeast more than a couple of months past the expiration date make a starter to ensure the yeast take off and get rabid.

In your case you should have no problems since the date is pretty close.

Yup, my JAO is blipping about once every 4-5 seconds, so everything appears to be just dandy. Now, to just wait the six-ish more weeks until its taste time.
