Always wanted to try an Oxymel. Apparently, the Romans used a hyssop Oxymel for cough syrup and marinades. Maybe it's good, maybe it's terrible. Don't know until you try!
Hyssop Oxymel - 500 ml
-Filled jar halfway with dried hyssop.
-Added 200 ml Texas Wildflower honey.
-Filled to 500 ml with apple cider vinegar.
-Mix well and let stand 2 weeks.
-Stain through a sieve.
I'll report back in a few weeks as to success or failure!
