Hi:

After the first fermentation with Gravity reading of 1.006 we divided our 5 gallon in two and add two different fruits. Apple vanilla lemon zest melomel and peach ginger melomel. We have only 5 gallon buckets.

After three days we are having bubbles every 40 seconds in the air lock. I’ve read is bad to leave too much head space. Will The excessive head space affect the fruit fermentation? Or can we wait for final racking to reduce the head space?

Do we need to add nutrients or energizer at this stage? Our plan is to leave the fruit for 4 more weeks before opening again. are we on track?

Any advise will be appreciated.
