Approximately 700ml of filtered vodka
2 large mangoes
1/2 cup table sugar
Waited until the mangoes were ripe, but not mushy, then chopped and pureed the fruit. These mangoes are on the tart side of sweet -- just how I likes 'em!
In a large closeable container, I poured approx. 700ml of vodka, and then added 1/2 cup white sugar. Stirred to dissolve sugar, then added mango puree. Mixed and covered. Set this on a shelf in the kitchen.
The plan is to stir once per day for 30 days, and then to run the cordial through successive layers of cheesecloth in order to remove the fruit.
Early tastings have shown this cordial go from interesting to delicious in just a few days. I'm eager to see how it will progress.
Finally, a question for the cordial cognizetti: should these drinks be served cold or at room temp?
