A quick and easy recipe I threw together last night. It was too good not to share. ;D
Salmon loaf
1 cup cracker crumbs.
14 oz. Salmon (Canned or Freshpack) I used one of each last night.
Small Jar Pimento's - drained.& chopped fine
1 cup celery chopped fine
1/2 small white onion - chopped fine.
5 eggs - beaten thoroughly.
2 tsp lemon juice.
Mix together thoroughly, and scoop into 7x9 baking casserole dish. (Spray pan with nonstick baking spray to keep it from sticking.)
Sprinkle liberally with slivered almonds.
Pour 1/4 cup Kasztelanski mead over the almonds.
Bake 385 40-45 minutes. Turns golden brown on top.
Set aside to cool 10 minutes and serve.
The mead is very subtle. Best served with a glass of cold water/slice of lemon as a beverage.
