Currently i live in the US, but i'm buying 15 hectares(or 37.06 acres) in Ukraine(my homeland, i wasn't born there but I'm first generation US) I'm planning on bee keeping and starting a brewery there in the next 5-9 years or so, first i need to go to college(if I need a degree to learn how to make Mead properly). What equipment would i need to start and what supplier could i buy them from who can ship over-seas. Thanks!

What kind of experience do you have brewing? Have you done many home brew batches? that may be a good way to start if not.

There is lots of great info on this website, so you came to the right place. if you are considering turning this into a career, invest into a Patron's account here. Also, there are some really good posts from people (like IanB) who have posted business plans, profit margins, and the major issues you'll come across (like learning how to keep for fermentors cool)

I haven't yet started on my own but I've helped my friend make a batch one time and I LOVED making it :D I'm going on Monday to get my brewing home brewing equipment, the recipe I've been thinking about(I'm open to suggestions)

5 gallons spring water

12 lbs clover honey

2 lbs sage honey

DV10 yeast(hopefully my homebrew store has it)

1lb dark cherries

Yeast nutrient and booster
 
I'd either get rid of or use a lot more cherries. 1lb is not very much in a 5 gallon batch, and will probably leave you wanting more.

If you're set on using DV-10, be aware that your proposed batch will run completely dry. If that's what you want, great. But if you want some residual sweetness, you might consider a different yeast.

If you decide to get rid of the cherries, D47 is probably a good bet. If you decide to use the cherries, 71B might be a better yeast choice.

I'm thinking on making a few test 1 gallon batches, i suppose i'd make one with and one without cherries and change out some ingredients, and to get more of a cherry flavor, but not too powerful so you can taste them fully, but have more of a note on the stronger side of cherry. And whats a yeast or recipe i can use to make Mead ale or sparkling Mead?

-1 gallon spring water
-3lbs Clover Honey
-1lb sage honey
-(still undecided on yeast)
-2lbs of sweet dark cherries

i used the calculator and i come out at 19.68 abv if there isn't yeast that can handle it i could add a little less honey or cherries

And another thing, i want to have my own apiary when i start(i'm going to apprentice under a beekeeper in a few weeks) whats a hive that i could use commercially that wouldn't mess with the bees and that i dont have to tamper with(exept taking honey of course) i'm going to have 30 acres to work with.

if you are going to have bees for your own honey supply i suggest work out how much honey you will need per year and then work out how many hives you will need to produce it and how many staff/cost/etc it will require.

what type of hive? use whatever the local beekeepers use, preferable something thats a standard commercial hive. with small number of hives you won't have your own processing plant and will need your hive to fit other peoples machines.
 
And you'll probably want to look into how many flowering plants will be within bee-range, I'm sure that'll factor into just how many bees you can keep. 30 acres is pretty small for a bee, so seeing what's being farmed nearby will tell you a lot about what kind of honey you'd get as well.

2.- Дневник - пиши всё что делаешь или наблюдаешь.
3.- Опыт набирается опытами, так что делай маленькие партии но по чаше.
4.- Будь терпеливым, медовое вино требует терпение, в сдачу получишь шедевры медовые вина. Так что не спеши.

Here's an interesting link where you can buy equipment for beer brewing, which of course can be used for mead making. This equipments are made in Germany and I asume that should be cheaper than buying them in the USA, but who knows ... life is like a chocolate box.
