Thanks, that has the missing chapter! I made myself a offline HTML file of the guide with images, tables and chapter links. The original online one is great but 1/3rd of the page is covered by the top & side headers and makes it harder to follow. If there was interest and it is not infringing on copyrights, I could try to make a updated PDF version with images, links & tables.

I did the offline version a couple years ago - has saved it to hard drive from the site - when site changed and some things didn't make it back to the first page - I did the offline pdf that you're referring to. Rumor has it that the guide is being updated. Have to ask a mod if there is any infringement - or just wait for new one that is supposedly being updated.
 
I think I will wait, it seems to be the thing to do when you make mead.
