Fermentation stopped at least two weeks ago, if not earlier. Batch is in secondary, slightly hazy, with a thin layer of fine lees. Would it be OK to stabilize now, prior to being fully clear?
Yes. Commercial wine kits have you add the clarifier immediately after the stabilizers. They even instruct you to stir up the fines so that the particles will cling to each other and get weighed down with the help of the clarifier. This only applies if you have already racked at least one time. A carboy full of coarse lees will overwhelm the clarifier.
