Added 5 Campden tablets to what used to be a 5 gallon batch. Too late, I realized that it is now just a 4 gallon batch due to racking losses. Is this harmfully excessive?
No, You should be fine. It will become less concentraited over time. You might want to consider moving away from Campden tablets over to potassium metabisulfite. It does the same thing without leaving behind a salty profile.
Well. I usually wait about a year in bulk before I bottle but I have so many carboys I'm not needing to move on because I need an empty carboy. A larger vessel is less affected by temp changes and such. I think if you age in bulk, the longer it's in bulk the more cohesive the bottled mead will be at the end of the day. If your not planning on back sweeten you could bottle as soon as it is clear. I see so many pics of dirty bottled meads and wonder why the hurry. It taste so much better when it's clear than it does when tons of crap is still floating in suspension.
