What's with the 3/4 gal (est) of juice to the side? Is that a yeast starter? Or is it extra must? What do you plan to do with it?

I haven't really thought of it before but (after seeing the picture) when one makes their next batch, they could siphon off 3/4 a gallon of the active fermentation into another batch of must. That extra must could be used to replace the lost must. For me ... I use a lot of honeys and I may not be so organized to follow my observations.

... before you know it, you'll have 20 little 5-gal bottles sitting around in various stages of fermentation or aging!

Looks like the extra must was too much to fit in the carboy.
 
well, at this stage it taste like alch. ther eis little to no residual sugars. Quite dry. You can't really taste the apple or honey much now. BUt, I'll back sweeten it with just a touch of honey and a touch of cider before I stablize it and bottle. that will bring it to jus thte right level. In addition, next time I rack it, I will add a vanilla bean and chrystalized ginger.
