I just put a new mead together...here are the ingredients:
24 pounds of Guajillo Honey from Tejas
A strong tea made from 4oz of heather tips and a whole box of lemongrass green tea
Water to 6 gallons, plus Fermax, acid blend.
Aerated for about 30 minutes using a stone and pitched a large, 1 liter starter
OG is 1.135 which gives me a potential alcohol of 18%...lucky I pitched a yeast that craps out at 14-15% ABW
Oh, and I thought I'd put the "don't sulfite, boil, or pasteurize" theory of meadmaking. I'll let you know how it turns out, but let me say that I was 2x as careful with sanitation this time...I even had to lock my dog outside and forbid my wife from entering the kitchen!
