This is my second attempt at a mead (the first was poured down the drain), but my first attempt at JAOM. My question is this...In my first mead, my bananas were floating on the top. I poured it out when I discovered, they had become moldy (it looked like it had fur). In my new batch, how much should I be worrying about the fruit on top becoming moldy? I would like to enjoy this one.

I followed the recipe exactly. I did not, however, get a SG (it was still packed), as I had just moved. :(
 
I bottled some 2 month old JAOM this weekend and can say that it didn't taste bad but got some kick for sure.

This stuff needs to age for a few more months to get better correct???
