Bottled this one last weekend. The dry hopping worked very well--super fresh hop aroma. Nice mellow flavor; it should be pretty good once it's carbonated. First test is in about a week.
Tasted my first 3/4 full bottle as a test. At first the hop aroma was totally dominant, and the hop flavor was a little strong too. But after a few sips the honey flavor really came out strong. So good! This one will need some time for the honey to really integrate well and the hops to blend in, but it will be great once everything falls in place. Can't wait for summer!
This one went to the fair and came back with a 28.5. The judges thought the honey character should be more pronounced (too much hops) and it would score better in the specialty category (I submitted it under the wheat ale category). One judge thought there were some Brett notes which corrupted the "nice and easy" style of the beer. Hmm, I'll have to work on that...
In light of the comments from the fair (too much hops, not enough honey), and comments from my wife (too much wheat), here's the new and improved version of this recipe:
Hilary's Summer Honey ale, version 3
5 gallons
1 lb 2-row pale
1/4 lb honey malt
1/4 lb white wheat malt
1/4 lb crystal 20
4.5 lbs liquid light extract
1.5 lbs honey (orange blossom, starthistle, sage, whatever sounds good)
3/8 oz Cascade 60 min
1/4 oz cascade 15 min
1/4 oz saaz or tettnanger 15 min
