The Pineapple Melomel has become one of the favorites we've made to date! We froze some fresh pineapple before putting it into the secondary (2 pineapples in 2 gallons).
When we sweetened, shortly before bottling, a hint of pineapple was present again.

Oh, and I'd stay away from the Pina Colada....not because of any macho crap, but because I hate the taste of coconut! :P
