Sage Honey?

Well, my first 5 gallon batch is now bottled (I used orange blossom honey - a bit pricey at www.morebeer.com) So I'm ready for my next 5 gallon batch. I was thinking about a berry based melomel, and have been starting to do some honey shopping.

I found an interesting web site - The Flying Bee Ranch ( http://www.flyingbeeranch.net/ )

They seem to have very good prices, and quite a few interesting momofloral varietal honeys. Meadowfoam, Fireweed, Babys Breath, and Blueberry Blossom, just to name a few.

One of the varietals they sell is White Sage Honey. They make mention that it has a high sugar content, and is great for meads.

Does anyone have experience with Sage Honey?

So I was thinking about 12 pounds of sage honey, 4 gal spring water, and 8 - 10 pounds of various berries - blueberries, blackberries, and dark cherries. Maybe some black raspberries if I can find them.

I'd imagine I'll needs a very alcohol tolerant yeast. I need a bit more study for that.

The search feature is your friend! Searching for "sage" in just the recipe, brewlog, and ingredient sections turns up 141 hits, many of which are for sage honey.

Also check the bottom of this page in the "similar threads" area. Lots of sage info down there.

Lots of varietal honeys.8) But their prices aren't the best that I've seen, which is not to say that the honey does not merit their prices.

Take a look at Millers, GloryBee and Bennet's Honey Farm.

As you can plainly see, you've come to the right place if you're "seeking sage advice".
 
As far as sage honey goes, I've used Miller's to great effect. It is a clean, aromatic honey with great body in a mead. It goes great sweet or dry and is crazy good when oaked. It's great in a dry mead paired with grilled chicken, pork and rabbit. It's good with baked brie, grilled vegetables (sweet potato, eggplant, red onion and sweet red pepper, etc.) the sweeter versions are great compliments to tart fresh fruits, aged Parmesan, prsut (or prosciutto if you can't find real Dalmacijan prsut) rosemary/sugared figs, olives and dried apricots.
 
All this talk about sage honey got me hooked- I ordered 24lbs. from FlyingBee Ranch! I plan to make a traditional and a cyser from it. Any yeast suggestions from you big hitter's out there?
 
I really liked the D254 and BA-11 strains in my orange blossom traditional yeast test. D47 is also a nice one.

For cysers I've had good results with D47, 71B, and K1V-1116.

Thanks akueck. My last cyser was with D47 and it turned out well. I do have some D254 and I think that would also work in both. I am also considering something very new(for me)- W15, which according to Lalvin can do reds and whites(both rated "4"), has low nitrogen needs, and a 16% EtOH tolerance- plus it will ferment at 50F! I was intrigued, so I ordered 32 gms. of it. Have you( or anyone else)had any experience with W15?
 
My suggestion for Cyser would be either K1-V1116 or 58W3. Both are low to medium-low nutrient needs, strong, clean, neutral, rapid fermenters.

Shoot, had some 71-B lying around and used it instead?
Just racked off the first ferment, which was pretty darn good
and used a bit of nutrient & energizer to go with. Had to clean out
the wood burning fireplace in basement, so needed to put a heating pad
on it for the second phase. Took a bit to restart, however added more
juice to bring up the carboy level! Boy after reading Icedmetal's fiasco I
sure do look at those bottles a bit more carefully :eek:
