I'm sure I'm not doing something right here. I have a 1 gallon batch of Wolf Moon on the go, and I (and friends) are very impressed so far. The question is, I would like to make a 5 gallon batch of it. I understand the quintupling of the ingredients, but should I only use 1 packet of yeast, or should I use more?

Usually 1 yeast packet is good for 5 gallons, although i personally use a starter and 1 tsp for 5 gallons. YMMV

Agreed. Some people recommend using two 5g packets for particularly high gravity five gallon batches, but I've never had trouble using only one packet.
Buy 500g packs of yeast, and stop caring. Bucket chemistry FTW. It's much more economical, and you can't really over pitch yeast... I use 1-2 heaped teaspoons in a 5 gal.
