Too much honey in 1 gal batch

Hello all, this is my 2nd try at posting a question not sure what happened to the first one but it never appeared. I was making a batch of mead 1 gal and mistakenly put about 5 lbs of honey into it.

Recipe; 1 March 2018

5lbs of various types of honey (It was in kilo's, grams and after I added it all in and translated it, it turned out to be 5lbs total)

Lavin D47 yeast 5 grams
1 tsp yeast food, 1 tsp yeast energizer
Heated some water (not boiled) and added all honey letting it mix in really well. Added to glass carboy and shook it for about 5 minutes to add lots of O2. Then added yeast food/energizer shook more then added yeast and topped off with spring water, air lock and let it sit.

Started to bubble within 45 minutes. Starting gravity was really high at around 1.160. After 2 weeks I added a little more yeast food and energizer and the bubbling increased for awhile. Also I removed the CO2 gas daily, seemed to have ALOT of CO2 build up in for 2 weeks or so.
I took another reading a week ago and it was around 1.145 which still seems pretty high. I took a taste and it tasted really good, just very sweet. As of today (28 March 2018) it is still bubbling at about 5 or 6 bubbles a minute with some sediment at the bottom. Question is, do I have a stalled fermentation? I was planning of moving it to a new carboy 1 April, should I just wait until it is totally finished before doing so?

I know I have a lot of questions (newbee ones) but I am pretty much a newbee at this rather fun hobby!

Any advice would be most appreciated! Thank you ;D
