What kind of problems do you all think I will run into if I added 1/2 tsp too much potassium sorbate to a gallon of Joe's Quick Grape Mead?

Anything I should look out for?
 
I added a 1/2 campden tablet with the Potasium sorbate so I could back sweeten.

The campden is the sulfites correct?
