So on 9/6/2010 I started a mead with ~18 lbs clover honey and ~3.5 gallons apple cider (unfiltered juice) to a SG of ~1.12. I am fermenting everything in a 6 gallon carboy because I didnt have a spare bucket. Using Cotes Des Blancs yeast.
I only filled the carboy to about 5.25-5.5 gallons, so that it would not "bubble over" and out the top of the carboy. Once it calms down, would it be okay to top it up with a cider/honey mixture that has a SG of ~1.12?
I just want to make sure I'm not forgetting something. Thanks!
