I say, be as greedy as you want! But stop racking into the main carboy before you hit the lees, and put the rest into a soda bottled, so the lees settles down into the feet of it, and you can rack it out again easily not disturbing too much of it!

I agree. I make extra and have a gallon and/or a few quarts I use to top off.

I cut the top off a pop/soda bottle first, then re-inforce it with some duct tape, so it's easier to lift it out the fridge after a day or so without disturbing any sediment that has dropped into the feet, plus the mold nipple makes a fine level to rack down too and only the sediment and liquid should get left in the feet. Equally, once I've racked to the bottle, I also just cover it with cling wrap plastic before putting it into the fridge.....

It does take a bit of practice, but it's a handy way of reducing racking losses....

Yes! My diet has me devoid of any alcoholic beverage for the next 40 days. My brain is starting to tire from all the parts getting back to full operation. ;)

Well....just think how robust you will feel....go to the gym...ear carrots and celery.....abandon all those nasty habits....just for 40 days and 40 nights....then, throw w hell of a party and go back to the old ways...LOL

Oh you know it. I'm celebrating with a weekend in New Orleans. That should get me back in fighting trim (which is round).
