Since I've never really been too concerned with final ABV until now, I'm not sure how to approach this. My formulations were approved for an "ABV of 11-13%." So I want to stay as close to 12-12.5% as possible. What I'm finding is I'm going a bit past the 13% mark with my test batches so I'm wondering how I get these ABV's back into my target without changing the taste or body too much. I know I need to calculate out the amount of honey a little closer now, but how does everyone here tweak that final ABV% if they need to?
I work at a brewery, so here we just add filtered, de-aerated water to tweak the ABV if we need to. I'm worried that will have an impact on my taste profile though.
