Since I've never really been too concerned with final ABV until now, I'm not sure how to approach this. My formulations were approved for an "ABV of 11-13%." So I want to stay as close to 12-12.5% as possible. What I'm finding is I'm going a bit past the 13% mark with my test batches so I'm wondering how I get these ABV's back into my target without changing the taste or body too much. I know I need to calculate out the amount of honey a little closer now, but how does everyone here tweak that final ABV% if they need to?

I work at a brewery, so here we just add filtered, de-aerated water to tweak the ABV if we need to. I'm worried that will have an impact on my taste profile though.
 
I think the adding water idea is the way to go. If you're adjusting from 13.2 to 12.8%, you won't change the flavor very much. If you're going from 18 to 12%, well you've got other problems. ;)

I would also use water, you need to think about your total volume vs what you want to change. Adding a little water to 300 gallons is not a big deal, adding water to 3 gallons can be a big game changer.

No hard/fast rule, but the bigger the batch the easier it is to adjust without screwing stuff up.
