A nice BOMM or JAOM but that's only because that's all I've made. Once I make a sparkling mead that I like, I might go with that.
 
You like your cider plain or with spices? I got a 6g batch that's a month old I'm racking tomorrow.

I have been making plain hard cider - with a very little CO2 (petillant) and an ABV of about 7 or 8 %. I am currently experimenting with added hops. One gallon with boiled hops (East Kent Golding) and another with aroma hops (a gallon with Fuggle and one with Citra) - but these are not quite ready to bottle just yet...

Maybe next year I'll try hopping some sparkling cider... right now my go-to would be JAOv's (usually blackberry) because I drink infrequently and I don't have to worry about finishing the whole bottle because it takes a lot to oxidize a JAO.

I've had some really good luck with sparkling hydromels made from fruit second runs (take fruit bag from wine or mel batch, dump honey over it, add more water, ferment it again, I've done it with pear, pumpkin, crabapple and red currant), and my ginger hydromel kicked ass too.

Hydromels and JAO's are both great because they're both easy and they both tend to ferment and clear pretty quickly. If I drank more often, I'd probably keep make more of these.
 
I'm thinking to start working on a Cyser recipe that's 10-12% ABV, carbonated and bottled in beer bottles. For just such occasions.
 
My two Go-To’s are my Tart Cherry mead (orange blossom honey). Nice and tart and dry. And my Tupelo lager mead- made with Lager yeast at lager temps and then aged on oak… Awesome!
