That's a pretty good chart Dan!
I like the descriptions of the food because the difference between simply prepared and richly prepared make a big difference in the pairings from what I've experienced.
I'd add several fleshy fishes into the Full Body white wine sector (swordfish, wahoo, baracuda, albacore, yellowtail, dorado, etc.) along with upland game birds (quail, grouse, pheasant, chukkar, turkey, pigeon, etc).
I'd also definately add grilled lobster and shrimp, sushi style softshell crab and marinated mussels into the intense flavor sector along with waterfowl gamebirds (duck, swan, goose) goose can actually go either way.
I'll add more a bit later on, I have to run and get lunch. All this food talk and I'm working on no breakfast yet.
