I have a question. If I want to add some yeast late in my ferment, do I rehydrate them and then boil them. Or do I just toss the dried yeast straight into boiling water?
Well first, yeast hulls are not quite the same thing as ADY. Yeast hulls are a component of yeast (what's left when their innards are removed). Sometimes when folks don't have yeast ghosts (hulls) they will use some boiled yeast, but they are not exactly the same thing and you shouldn't confuse the terms.
When I do add boiled yeast, I put the dry yeast in some water and nuke it in the microwave until it is boiling.
