Though this has some unusual additions (apple cider), I think it will make for a wonderful Fall braggot. Braggot in my house are as fleeting as a solar flare, hence the name. And I've got a stellar theme for all my beers/braggot.

Day 0 (yesterday)

Specialty Grains
1.25 lbs Crystal Rye
0.625 lbs Belgian Cara 45
-Steep grains at 170 F for 20 minutes in 2.5 gallons of Ozarka spring water.
-Remove grains and gently squeeze to extract all the malty goodness.
-Bring to a boil. Kill heat and add 6 lbs Golden LME.
-Boil for 30 minutes with the following hop schedule:
1 oz Chinook for 30 min.
1 oz Perle for 20 min.
1 oz Centennial for 10 min.
1 oz Cascade for 5 min.
-Add 4 lbs of Orange blossom honey while cooling with a heat sink coil.
-Add 1 quart Apple cider and water to 5 gallons.

Pitch with 2 packs rehydrated US05.

SG - 1.089
FG - 1.012
9.7% ABV
49 IBU
11 L

Gravity 1.010. Sitting pretty at 10% ABV. Tastes really nice. The OB honey really comes through in the aroma. The small amount of apple juice adds some brightness to the braggot without tasting like cider. I'll wait 1 more week and keg it.

A quick thread resurrection from the dead. Just drank my first bottle of this stuff, Used 2 oz Northern Brewer hops at 30 min and 2 oz Centennial at 6 min.( per recommendation from Bray Denard) Used backyard wildflower honey from 2015. 6 weeks in primary and 4 weeks to bottle carb/ condition. Really good. You can taste the honey, hops and malt. Not your average beer at all, and not something you can get at the store.

I am into this, rest assured. I am not trying to irritate Squatchy, but he is not the Thread Police, and some of his comments to other mead makers are downright rude, and uncalled for. Telling people they are stupid, or their mead will taste like crap is pretty disrespectful

*Sigh* I don’t know why I get dragged into this, but here goes:

1. Squatchy doesn’t mean to be rude. He is very direct and it’s easy to take the wrong way. I know I’ve called him on it before, but later realized no harm is intended. He is just brutally honest about what he thinks. It’s refreshing once you understand no ill intent is present.

2. His only wish is that your mead be the most awesome it can be. He puts a lot of effort and zeal into helping new mead makers dispel old myths and learn good technique. Please see the extensive posts and GotMead podcasts he has been involved in. He was also runner up for mead maker of the year. He does know how to make good mead and will spend his own time to teach it to others.

3. I’ve also spent the better part of a decade helping new mead makers. It’s exhausting. Folks ask for advice, then ignore the good advice that is given. Some just refuse to learn. I have a lot of patience trying to get through to those folks to a point, but after a while it’s like beating a dead horse. Squatchy does not have that patience. He just says the stuff I think while I sit here and chuckle.

4. We are a generally friendly community here. Little tiffs are no big deal. Just go back to learning how to make mead and ask questions. I don’t personally care if you go necromancer on us. You can also shoot us emails as well. We are all willing to help!

Thanks for the clarifications on Squatchy. And I do realize he is knowledgeable. I have read his posts on various subjects, and I am learning. For my first mead, I followed the Making Good Mead paper by Kristen England, and the mead turned out great. It was a little "warm" at bottling, but after 6 weeks, that is gone, for a lightly fruity choke cherry mead, with abundant honey flavor. But I digress. I will always take good advice from experienced people. I've been a home brewer for 26 yrs, with ribbons won, and I still pick up useful nuggets of knowledge to make my beer even better.

I really appreciate your kind words. I might also add missing two fingertips makes if hard to type. So I don't do the long-winded politically correct very good because of that also. And to you Robert. I'm sorry we got off to a bad start.
