I have 5,1 gallon jugs of a semi-sweet traditional mead. I would like to make one of them a cranberry cinnamon mead for the holidays. I have cinnamon sticks and a large bag of dried cranberries. The traditional is already a bit sweet for my taste so I don't want to add any sweetness just the flavors. Any thoughts or suggestions?
If the cranberries are sweetened, which they likely are, soak them in water & gently move them around to wash off most of the added sugars. Then add them in your mead with the cinnamon.
Also, the cranberries likely have a light coating of some kind of oil. (Helps them not stick together so much because of all the sticky sugar they added). I would say a mildly warm water, not hot , but, not cool either, may help wash some of the oils off of them.
I made a cranberry mead last year, but, I used to many & left them in way too long.
I would suggest 1/2 stick of cinnamon, crushed, & 2 ounces of cranberries (rinsed), in a sanitized brew bag so it's easier to pull them when the flavor is right.
How long??? That would be your personal taste. Maybe start tasting it @ 1 week & daily or every other day after that. Keep in mind, time changes flavors in mead. The cinnamon maybe really strong in the beginning, but, will likely fade back quite a bit in 6 months. (If it makes it that long
