Hello, I hope I'm on the right thread. but I'm making my first brew of mead and didn't realize I was supposed to get the gravity reading before beginning the fermentation process to compare to later readings. So I was wondering if anyone could tell me about what the gravity would've been for 3lbs of honey to 1 Gallon of water. I also have 12 once's of habanero and 20 ounce's of mango chopped up into it. Also, also, I'm about a week into the fermentation, if that's important.
 
It's around 1.1142

I depends on whether you started with 1 gallon of water and then added your ingredients (which means your batch would be more than 1 gallon) OR whether you started with the ingredients and added water until you had a total batch size of 1 gallon.

Thanks for the estimation! I started with 1 gallon of water then added my ingredients. If I'm reading my Refractometer right, then I'm now at 1.034, and it's read about the same (give or take a few.) for 2 days. It's been barley a week since the start of fermentation so I feel its way to early for it to be finishing up, should I give it more nutrients? It's currently got 1/2 tsp of Ferm-go (an accidental add, grabbed the wrong bag.) 3tsp of Fermaid-O, and 1 1/2 tsp of DAP. any advise would be much appreciated.
 
With the amount of sugar you had, you had a potential ABV of around 17%, so it will probably not get down to 1.000. I would probably give it a stir and “walk away”. Leave it alone for a week or more, and then give it a taste. D47 is kind of finicky and would NOT be my first choice when making my first batch of mead. Because of the mangoes and peppers, your starting gravity may also have been a little higher. If it stays at 1.034 then it might be a little sweet, but the peppers may help to balance it out.
