Honey = 12 lbs per gallon

More or less. You might have some amount of loss/gain (I'd guess loss) but I doubt it will be much--maybe a couple of percent.
There is some loss of net volume from the honey sugars going into solution with the water, but since most of the sugars in the honey are in solution already, the difference once you mix with water is only a couple of percent. Not enough to be concerned about -- in this case 1 + 1 does = 2.
