I need some help, I have probably made a mistake somewhere but reviewing my notes not able to recognize it so here goes. I made the 5 gallon BOMM and my notes/records match exactly the recipe. At 30 days my gravity was .099, starting was 1.092, taste was very dry and "hot", racked to glass carboy and added some some oak cubes and vanilla as per Denard's gallon version, let this set for two weeks and and checked again. Gravity had not changed, taste not quite as harsh but still nothing I would want to drink. There was some sediment in this carboy so racked into another carboy and here it sits with me rereading my notes and the recipe and maybe I'm not seeing the forest for the trees. My question is what can I do if anything to save this, will back sweetening help/save this and if so how. Ask questions/make recommendations I want to learn. Hopefully something someone will ask will make me look at something I hadn't thought of or looked at yet. Thanks to anyone who assists upfront. BTW this wasn't my first, had made two one gallon batches of JAOM successfully previously.
