A good Tej read

Indeed, I think Kloman's account is the only reliable and useful account of t'ej I know of. I have based my recipe and technique on his description although I use Kloman's account as the basis of my approach and don't follow his model quite literally, not least, I allow my t'ej to clear over months and not three weeks (I treat t'ej as a wine and not a beer).

You chose a yeast as well, don't you? Rather than giving it over to the wild?
