Hey, I'm new to this forum and the mead making process in general. Can anybody tell me if this recipe is legit?

I would go for a more traditional approach, but I don't have access to any mead making supplies; the closest store is over 100 miles away (I live in a very rural area).
I have gone through this recipe's steps and it should be finished with the two week fermentation period in a couple days. How long show I age it to let the remaining yeast die, and how thoroughly should I strain it? Will it be safe to taste test it, just to be sure I did it right?
