Been about a week since started batch of mead. Added nutrient 3 times: at 24hr,48hr, and 72 hr. Activity has slowed down。significantly. Should I add anymore nutrient? Specific gravity is currently 1.0545. Final gravity goal is 1.013. Also at what point should I start to see clearing of must and sediments {lees}
at bottom. And finally at what point should I rack to another container?
 
Take a deep breath, relax and walk away……

I’d wait another week or two, to let the yeast finish up and for some clearing to happen. Then you can rack it and let it sit for another week, to get some more clearing, as the process of racking will stir up some of the sediment. Are you going to use a clearing agent? If so, I’d recommend “Super Kleer”.
