lol that's what I said, then I racked a mead into it and shrugged ;)

Should be a good outcome! Can't wait to hear results. I want to add a couple of 5 gallon barrels to the tardis. I wonder about oxidation. I expect the mead will acquire a sherry character in one.

I've packed up a bottle in your box to send back. It is getting a nice Madeira type of flavor as time goes on. I'll be trying the blueberry soon. It's in the cooler resting from its trip to the tropics.

hah, I hope the blueberry is still drinkable. The apple I put inthe barrel(which is just under6 gallons not 5) filled it right to the rim. So I'm hoping the oxidization will be minimal.
 
I had put my apple pie cyser into this barrel, tasted at 1 week and it was getting good but need a little bit more time. I ended up not getting back at it till 15 days in and i think it crossed the fine line into be a little too oaky. Bottled directly out of the barrel we will see in a few months after some bottle aging.
 
Good luck! I remember reading that oak tends to mute a little as things age. So you might be OK. Also you can always blend with un-oaked mead.

I honestly dont think anyone will say its bad, i still think it drinksw well. Has a hint of a whiskey in the nose as you bring it to your face, which over powers the apple a bit.
